Lately, there has been increased interest and demand for dry-aged beef products in international markets. Joining in the trend, Maria’s SteakCafe is now serving dry-aged beef at all of our outlets. What is so special about dry-aged beef? Dry-aged beef has to be hung or placed on a dry ager to be dry-aged usually from 2 to 8 weeks. Some are dry-aged even up to 365 days.
During the dry-aging process, moisture is drawn out of the meat. This causes the beef flavour to become even beefier and more flavourful. What’s more, the aging process causes the beef’s natural enzymes to break down the connective tissue in the meat, making it more tender. A crust of fungus which grows on the outside of the meat while it ages furthers this tenderization process, while adding a nice, corn-like flavour to the dry-aged beef. The longer a piece of beef has been dry-aged, the more flavourful and tender it will be. Had the US Prime Angus Steak and Lamb Cutlets. Loved the steak, grilled to perfect doneness, fats melted in the mouth! Lamb cutlets were pink and tasty. Well marinated, good to the last bits on the bone. Sides of garlic buttered vegetables and potato complemented the meat very well. Attentive staff and wonderful meal. Will definitely be back for more!

Came here for our anniversary lunch. Wahyu beef is amazingly good and juicy. and the lamb cutlet is quite good as well. Staff service is excellent too, and Sadhis has been friendly and helpful.

Lamb Cutlets to Die For!

Maria's is famous for its consistently great steaks. But one should also try its lamb cutlets.
I have now on three consecutive occasions have had lamb cutlets at Maria's. On all three occasions, I was truly impressed. All in all, it was a wonderfully enjoyable dish. Thanks to the chef and also to Joel for the great service.
